sizzling ! Common Sunchoke aka Jerusalem Artichoke Tubers x5

Jerusalem Artichokes (Helianthus tuberosus) produce edible tubers that taste prefer a cross between a potato and apple. Tubers can be dug as needed during fall/winter months for optimum sweetness. We like them in a creamy soup for cold days, or as a savory roasted vegetable.

5 tubers will come in a mildly damp soil mix with at least 3 “eyes” per tuber and may have started to sprout. Plant soon after receipt for ultimate results. They can go directly in the ground, or in a pot if the ground is too frozen and perform best at a planting depth of 2-4”. They are really quite sturdy, and tolerate the harshest conditions Missouri will throw at them without complaint.

Sunchokes can be persistent, so only plant where you aren’t worried about them staying. This type gets about 5’ tall, and bloom late summer until the first frost with showy sunflower like blooms. They make a lovely flower arrangement.
